Steak au Poivre Ingredients

2 Chef’s Requested Bacon Wrapped Filets

2 tbls. Coarse grind black pepper

2 tbls. Coarse grind black pepper

1 tbls. Salt

2 tbls. Light vegetable oil

1 cup Beef Broth

½ cup Heavy Cream Fresh Parsley


Mix salt and pepper together in a shallow bowl. Secure bacon around steaks with a toothpick. Dip steaks in salt/pepper mix and set aside. Preheat oven to 375°F. Heat sauté pan to medium-high heat. Add enough oil to cover bottom of pan. Sear the beef on both sides and place on baking sheet. Place steaks in oven. In the sauté pan, add beef broth to deglaze pan and cook until broth is reduced by 2 thirds. Reduce heat and add cream, cook 5 minutes. Once steaks have reached an internal temperature of 160°F, take from oven and remove toothpick. Place on plate and top with sauce. Garnish with fresh parsley.
